This is clearly not the most visually appealing dish, but it ranks as one of my new (and permanent) favorites. Blythe even loved it, which is no small feat at this stage in her toddlerhood. It's also a "one pot" recipe so you won't dirty up multiple dishes during the prep.
I don't frequent the blog from which this recipe came (it was found via Pinterest), but if they keep on churning out these recipes I'll probably start visiting. Even if the blog title is "The Life & Loves of Grumpy's Honeybunch". Ha.
Git yerself into the kitchen and whip this up!
chickpea quinoa pilaf
adapted from Grumpy's Honeybunch
1 medium white onion, chopped
2 large cloves garlic, minced1 tablespoon olive oil
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons tomato paste
3/4 cup quinoa
1 can chickpeas, drained and rinsed
1 1/2 cups water or vegetable stockSaute onions and garlic in olive oil until onions are soft. Add cumin and saute a couple if minutes. Add salt, pepper, and tomato paste. Stir and cook one minute. Add quinoa and saute about 2 minutes. Stir in chickpeas and water. Bring to a boil, reduce heat and simmer, stirring occasionally, for about 20 minutes or until quinoa has soaked up the liquids.
