As has been the case lately, I believe I found the original recipe for this bread via Pinterest. I was on the hunt for a whole wheat sandwich bread, and this one looked like one I could easily veganize with some substitutions.
Even Ryan, the ever-critical bread evaluator, said that this one was great - light and fresh and fluffy.
I was a bit nervous about the success of the bread, given my foray into vegan substitutions and that I was making (and potentially ruining) 4 loaves. So I was even more pleased with my accomplishment - until I freaking dropped one of the bread pans full of dough right before putting it in the oven! Bah! Three loaves it was, then.
My substitutions included earth balance as a replacement for the coconut oil/butter, and agave nectar for the honey.
Since Musings of a Housewife has the step-by-step instructions with photos, I'll defer to her recipe and instructions without restating them here.
Go make some bread! And then become intrigued by various blog posts and books and wonder if you should eat any at all!
