I made these cauliflower "breadsticks" in an attempt to satisfy my pizza craving during this wheat-free attempt - and although it involved more cleanup than the average pizza (and by that I mean there was just one more item with the food processor involved), it was a very close substitute to the real deal.
And Ryan and Blythe weren't interested, so the cauliflower breadsticks were all mine....muahahahaha.
Cauliflower "breadsticks"
adapted from Mom, What's For Dinner?
1 head of steamed, "riced" cauliflower (I blended everything together in the food processor
1/2 cup shredded mozzarella
1/2 cup parmesan
1 egg, beaten
1 tsp Italian seasoning
1/2 tsp garlic salt
olive oil
*optional pizza sauce for dipping
Prepare your baking
stone or sheet by spreading a small amount of olive oil on it and top with
parchment paper.
In a medium bowl or food processor, stir (or pulse) together cauliflower, egg, parmesan and mozzarella. Add Italian seasoning and garlic salt.
Transfer to the baking stone or sheet, and using your hands, pat out into a large rectangle.
Bake in 450-degree oven for 15-20 minutes, slice and serve.



I really want to try these cauliflower substitutions, and this looks good enough I may actually do it!
